Fajita Quesadillas | Whole-Food, Plant-Based, Vegan & Oil Free


Although lunch is sometimes difficult, it doesn't have to be. We love making these quick and simple fajita quesadillas for lunch for the whole family. If you want to make it super simple you don't even have to make quesadillas, you can just put the refried beans and veggies topping on some cooked brown rice. Either way it is so delicious and satisfying.

Fajita Quesadillas


6 Food for Life Tortillas (or other oil free tortillas)

1 Can Refried Beans

1 Onion

2 Bell Peppers (Red, Orange, or Yellow)

2 Limes

Avocado

Spices

1 tsp. Chili Powder

1/2 tsp. Cumin

1/2 tsp. Smoked Paprika

1⁄4 tsp. Garlic Powder

1⁄4 tsp. Onion Powder


  1. Heat a pan over medium heat. Add onion and sauté for 3-4 minutes, adding a bit of water if the onion starts to stick. Add bell peppers and sauté until soft. Remove from heat. Add spices and the juice of one lime.

  2. Spread refried beans on two tortillas. Add bell pepper and onions on top of one tortilla, top with a second tortilla.

  3. Place on a clean hot pan or griddle and cook until golden brown. Flip and cook again. Cut into fourths and serve with smashed avocado & lime juice.

6 Beautiful Thanksgiving Books for Children


Just like in October where I shared a few of my very favorite Halloween children's books, I wanted to take a moment in November to share my favorite Thanksgiving children's books!

I love these Thanksgiving books. There are not as many Thanksgiving children's books as other holidays, but they are so good. I have loved finding new ones and love sharing the ones I remember reading as a kid. So here we go!
